How to store walnuts, almonds and cashews
Simple ways to store walnuts, almonds, cashews and raisins at home so they keep their flavour: airtight jars, a cool dark shelf, and the fridge in warm months.

Dry fruits keep well, but not forever, and how you store walnuts, almonds and cashews at home makes a real difference to how they taste a few weeks later. Nuts carry natural oils, and those oils go stale with heat, light and air. A stale walnut tastes bitter and flat. The good news is that keeping dry fruits in good shape takes nothing more than a jar and a sensible shelf.
The three things that spoil nuts
- Heat. A shelf above the stove or beside a sunny window is the worst place in the kitchen for a jar of nuts.
- Light. Clear jars look lovely on an open shelf, but they let the light in. A closed cupboard is better.
- Air and damp. An open packet lets in air and the steam of the kitchen. Nuts go soft, raisins stick together, and smells from the rest of the kitchen creep in.
