There is something satisfying about cracking a walnut yourself. The shell gives, the kernel comes out whole, and you eat it the moment it is opened. With thin-shelled Kagzi walnuts you often need nothing more than your hands. With harder shells, a few things from the kitchen drawer do the job without sending pieces across the room. Here is how to crack walnuts in shell by hand.
Know your shell
Kagzi takes its name from kagaz, paper. It has a thin shell you can crack in your hand, with a full kernel inside. Other walnuts have harder, thicker shells that need more force. You will find Kagzi walnuts in shell in Harud Harvest, and what the walnut grades mean explains the other names on our packs.
By hand
- Step 1: Hold two walnuts together in one palm, seam against seam.
- Step 2: Close your hand and squeeze firmly. One walnut pressing on the other cracks the weaker shell.
- Step 3: Push your thumbs into the crack along the seam and lift the two halves of the shell apart.
